“ Fillet- fish with vegetables “

Ingredients:

-      1 kg fish fillet

-      1 tsp. salt

-      ¼ tsp. black pepper

-      1 tsp. fish spices

-      ¼ tsp. chili pepper

-      ¼ tsp. lime, crushed

-      3 tbs. Sunflower Oil

For sauce:

-      2 tbs. tomato paste

-      2 cups water

-      1 tsp. salt

Vegetables:

-      1 red bell pepper, cut into slices.

-      1 green bell pepper, cut into slices

-      2 large potatoes, cut into slices

-      1 onion, cut into slices

-      1 lemon, cut into slices

Direction:

1-    Preheat oven to 180 degree and place oven rack to middle position. Prepare medium oven dish.

2-    In a wide platter place fish, sprinkle salt, black pepper, fish spices, chili pepper, lime on both sides.

3-    In a wide saucepan, heat Sunflower Oil on medium heat. Fry fish on both sides until golden.

4-    In oven dish, place red bell pepper, green bell pepper, onion and lemon slices. Then place fried fish.

5-    To make sauce: in a bowl add tomato paste, water and salt. Mix together then pour over fish and vegetables.

6-    Cover dish with aluminum foil. Bake for 40 minutes. Serve with rice.
