“ Salmon salad & penne pasta “


-      200g salmon, slices

-      3 tbs. olive oil

-      1 tsp. salt

-      1 tsp. black peppers

-      2 heads broccoli, separated into florets

-      250g pasta

-      Some mint leaves

-      2 tbs. soya sauce

-      3tbs. lemon juice

-      2 cloves garlic, crushed

-      3 tbs. vinegar


1-    In a large pot of lightly salted water to the boil. Cook pasta for 8 to 10 minutes or until al dente; drain.

2-    In another large pot of water to the boil. Add the broccoli, cook in the boiling water until tender, 2 to 3 minutes then drain.

3-    Combine Olive Oil, soya sauce, vinegar, garlic, lemon juice, salt and pepper in a sealable container; seal. Shake well to make the dressing.

4-    In a platter place pasta, broccoli, salmon and mint leaves then sprinkle the dressing over.
